1. Eve of first day, second semester

    Well technically, that’s today. Still waiting on that kavinace to kick in. 

    I made a salad in a jar! Picks to come, I am thrilled about it, I hope it tastes good. I put salad dressing (olive oil and vinegar and pepper and garlic powder, a little dijon mustard and a tad maple syrup. I had to use apple cider vinegar because I ran out of balsamic. Very sad. The flavor is not as good.)

    Dressing went in the bottom

    Second layer: chickpeas and black eyed peas

    Third layer: diced spicy black radish and also some other gorgeous green and fuschia one!

    Fourth layer: diced purple onion

    Fifth layer: sliced avocado (hope it holds up)

    Sixth layer: shredded raw carrot and red beet

    Seventh layer: lacinto kale

    Eighth layer: tangerine segments and a few walnuts

    Packed in their tightly, I am going to try to find a disposable bowl somewhere on campus, and shake that baby up and pour it out. SO EXCITED. I have been wanting to make jar salads FOREVER. 

    I plan on having a smoothie in the morning with frozen banana, protein powder, cocoa powder, flax seed and water. I have the dry ingredients in the blender now, the bananas are currently being frozen and the waters a’filterin

    We possibly will make a juice in the morning, but I have to wake up so early I kind of doubt it will happen. 

    I am bringing a banana, an apple, an orange, and a small handful of nuts to snack on. I hope it will be enough for the day, there really isn’t a thing that I can eat on campus, or off, really. 

    I also will have to drink most of my water when I get home, as I can’t be running to the bathroom to pee all day. So many unknowns tomorrow, I am NERVOUS. 

    Ugh. I will feel so much better after day 1. Hope I make it to all of my classes. 

    I am taking weightlifting first, and have workout clothes AND new sneakers as of today.
